Most, if not all of the coffee you've ever had has likely been roasted in a traditional drum roaster, where beans tumble against the insides of an incredibly hot metal drum that's heated by gas-fired burners. This direct contact often scorches the thin outer skin of the bean (called the chaff) creating smoke that lingers and gets absorbed by the beans. That smoke plays a major role in the bitter, sometimes burnt taste you might expect from the coffee you are used to, especially darker roasts.

Air roasting, on the other hand, use an all electric-powered process that gently suspends beans in a stream of clean, hot air, allowing them to roast evenly without direct contact with a super-heated hot metal surfaces. This prevents scorching or burning, which can release bitter-tasting compounds. Instead, the beans develop a cleaner, smoother flavor profile—even at darker roast levels—resulting in a cup that’s bold, rich, and pleasantly balanced.
